Ingredients

For Soup

  • 4 tablespoons vegetable oil
  • 3 large yellow onions, peeled and chopped
  • 3 ribs celery, chopped
  • 8 cloves garlic, peeled and chopped
  • 1 bunch swiss chard, washed and torn into small pieces
  • 1 bunch kale, washed and torn into small pieces
  • 1 bunch collards, washed and torn into small pieces
  • 2 bunches of spinach, washed and torn into small pieces
  • 3 tablespoons cajun seasoning (The brands I use are Slap Ya Mama or Punch Ya Daddy)
  • 1 tablespoon paprika
  • 8 cups of well flavored stock
  • 1 block of tofu cut into small dice or 2 cups of cooked and cubed chicken or 2 cups frozen cooked, peeled and deveined small or extra small shrimp or a combo of any of the above that is equal to 2 cups.
  • 1 can coconut milk
  • Salt and freshly ground black pepper, to taste

Saute the onions, celery and garlic in the oil in a large soup pot. Once the onion begins to soften add the swiss chard, kale, collards and spinach. Add the stock and seasoning and cook for 15 minutes over medium-low heat. Add the coconut milk and protein and salt and pepper to taste. 

To serve

Ladle into bowls. You can serve with hot sauce for those who like things really spicy.

So how do you make friends with Confidence?

  1. Ask her to meditate.

Mediation is a great way to engage with Confidence for a couple reasons. First, it provides the time and space to listen to the inane inner-critic that tends to spout off inside our head, which in turn, helps us disengage with and eventually quiet down that voice. Then, in the silence that is left, we’re able to find our true spirit, which Confidence loves and celebrates.

  1. Let her get to know the real you.

Scientists estimate that the probability of our being born is about one in 400 trillion. This number is based on the concept that the amount of available DNA vastly outnumbers the number of actual people.

And it sounds like a huge number until you consider what it doesn’t take into account.

One in 400 trillion doesn’t include the probability that your mom and dad would meet, which is about one in 20,000. It also doesn’t consider the probability that they would stay together long enough to have a child and that the right sperm would meet the right egg to produce you. (A one in 400 quadrillion chance, give or take a few.) It also leaves out the fact that your ancestors had to live to an age to reproduce and then do so.
